Peel the eggplant and slice it into thin strips along its length

Season the eggplant slices with salt, let them sit for 30 minutes or so, and then drain and pat dry

Wash the eggplant, dry it thoroughly, and chop it finely

In a bowl, mix together the eggplant, garlic, zucchini, and wheat flour breadcrumbs, seasoning with salt to taste

Shape the mixture into burgers
