6 large, cooked sweet potatoes

Remove the centers (with seeds) of the sweet potatoes and cut the shells about 1/4 inch from the bottom of the cavity
Gently massage with a little bit of butter
Arrange the slices of toasted bread in a baking dish and top each slice with a sweet potato
Fill the cavity of each sweet potato with butter, making sure to leave some at the top
Add a few drops of vanilla extract and 1 or 2 tablespoons of melted butter or margarine into each cavity
Bake in a moderate oven until the sweet potatoes are tender, basting them occasionally with melted butter or margarine
Bake for 30 to 45 minutes, depending on the size of the sweet potatoes
Serve with whipped cream
