Wash the sweet potatoes well, dry them and chop into small pieces, including the skin
In a large pan, heat the olive oil and butter over medium heat until fragrant
Add the minced garlic and cook for 1 minute
Using a spatula, remove the garlic from the pan and set it aside
In the same pan, sauté the diced tomatoes and sweet potatoes for 5 minutes
