Peel the cassava, wash it well, cut into 4 cm pieces and remove the central fiber
Heat the oil in a pressure cooker and sauté the onion
Add the cassava, green cilantro, salt, tomato, and water
Close the pressure cooker
Bring to a boil, then mark 8 minutes after the valve starts to wobble
Let it cool for 5 minutes
Finish cooling under cold running water
Remove the cassava from the cooker and place in a serving dish
Garnish with chopped parsley and cilantro
Serves 6 people.
