1 tablespoon of oil
4 tablespoons of butter or margarine
1/2 cup of grated onion
1 minced garlic clove
1/3 cup of red bell pepper, diced
1 kg of zucchini, cut into slices
3 cups of peeled and seeded tomatoes
salt and black pepper to taste

Heat the oil and butter or margarine
Fry the onion and garlic until they're soft
Add all other ingredients
Simmer over low heat, stirring frequently, until the zucchinis are tender but still hold their shape
Serve with pasta (serves one package)
Note: If desired, sauté 250g of mushrooms in 2 tablespoons of butter or margarine and add to the sauce for the last 5 minutes of cooking.
