1 kg of beef cut into cubes or strips about 3 cm
2 tablespoons of oil
salt and black pepper to taste
2 cloves of garlic, minced
3 slices of fresh ginger
1 medium onion, chopped (100 g)
1 tablespoon of cornstarch
2 tablespoons of soy sauce
5 tablespoons of rice vinegar
4 green onions, cut in half (with the green part)
1 tablespoon of cornstarch dissolved in 4 tablespoons of cold water

Heat a pressure cooker
Add oil
Reduce heat slightly and add garlic, salt, black pepper, ginger, and onion
Fry, stirring until browned
Remove from cooker with the help of a skimmer
Pat dry the beef with paper towels
Reheat the cooker and brown the beef on all sides, in batches if necessary
Return all the beef to the cooker, along with the cornstarch, soy sauce, rice vinegar, and green onions
Add enough water to just cover the beef
Close the cooker
Let it boil
Reduce heat and simmer for about 40 minutes
Remove the beef
Skim off any excess fat
Serve the sauce over the beef
Garnish with green onion, if desired
Serve in 4 portions.
