Directions

1 In a saucepan, combine the papaya, lime juice, orange juice, and sugar

Bring to medium heat, stir, and let it boil for a few seconds

2 Let it cool down and blend in a blender with the gelatin soaked in water and melted in a bain-marie

Mix in the heavy cream and fold in the egg whites delicately
