'1 handful of spinach (use only the leaves)'
7 tablespoons of butter or margarine
2 cloves of garlic, cut in half
1 tablespoon of salt
1/4 cup of all-purpose flour
A pinch of nutmeg
2 cups of milk
1 cup of grated cheese (such as Minas)
1/4 cup of white wine vinegar
6 eggs
Black pepper

Grease a baking dish and set aside
Clean the spinach, wash it, and place it in a pot
Cover and cook for about 5 minutes over low heat with just the water left from washing the leaves, until the spinach wilts
Drain well and chop
In a medium skillet, melt 3 tablespoons of butter
Add the garlic, spinach, and salt and fry for 5 minutes, stirring occasionally
Spoon the spinach mixture into the prepared baking dish
In another pot, melt the remaining butter or margarine
Add the flour, salt, and nutmeg and mix well
Gradually add the milk, whisking until it thickens slightly
Remove from heat
Add the cheese and whisk over low heat until it thickens and becomes a smooth cream. Reserve
Preheat the oven to moderate temperature (180°C)
Poach the eggs: in a skillet, bring 3 cm of water to a boil
Add the vinegar
Reduce the heat and add the eggs, one at a time, and cook until they reach the desired stage
Remove the eggs with a slotted spoon and place them on top of the spinach mixture
Pour the sauce over the eggs and spinach
Bake in the oven for about 15 minutes to warm it through
Serve immediately
