Mix the salt and flour
Add 3 tablespoons olive oil, mixing with hands until a rough dough forms
Add water and knead until smooth
Work the dough for 10 minutes and form a ball
Grease the ball with the remaining tablespoon of olive oil and cover it with a damp cloth
Let it rest in a cool place until ready to use
For the filling, cook the potatoes with skins until tender
Submerge them in cold water and peel
Cut them into small cubes
In a frying pan, heat some olive oil and sauté the onion
Add salt, black pepper, green peas, and coriander, cooking constantly for 3 minutes
Add cooked potato, coriander, and lemon juice
Cook over medium heat for 4 minutes
Remove from heat and let cool
Roll out the dough on a floured surface and cut into circles
Place some filling in the center of each circle and fold the edges to seal
If needed, moisten the edges before closing
Heat olive oil in a large frying pan (10 cm deep)
Fry the pies in batches until crispy and golden brown
Remove the pies with a slotted spoon and place on paper towels
Arrange on a platter and serve with ketchup.
