In a small skillet, melt the butter or margarine over low heat
Add the onion and let it caramelize slightly
Transfer to a bowl
Combine with the ground beef, cognac, mustard paste, and mix well
Pour into an oiled pot with capacity for 1 cup, and refrigerate for several hours or overnight, covered
Unmold onto a large plate
Sprinkle with pickled relish and serve surrounded by saltines
