Heat the olive oil and sauté the onion and garlic until golden brown
Add the abobora, banana, English mustard, salt, and water
Cover the pan and cook until the bananas and abobora are tender
If necessary, add more hot water
Season with salt and let it rest
Blend in a blender until smooth
Add the parsley and reserve
Season the fish fillets with salt and black pepper, wrap each one in aluminum foil
Bake in a medium oven for 15 minutes
Remove from the oven and serve the fish with the warm sauce.
