Fry the onion and garlic in olive oil over low heat until caramelized
Add the bread and parsley
Cook for 3 minutes
Add 1 cup of water, coconut milk, and 2 tablespoons of lime juice
Simmer
Season with salt and cook until the liquid has almost completely evaporated
Remove from heat and transfer to a greased baking dish
Arrange the fish fillets seasoned with salt and lime juice on top
Cover with tomato and green bell pepper slices
Bake in a preheated moderate oven (350°F) for 30 minutes
Douse with olive oil and serve hot
