Cut the cucumber in half lengthwise and divide each half into three pieces
Scrape off the skin, leaving some strips behind
Use a small spoon to scoop out the pulp and reserve

In a bowl, mix together the cottage cheese, olive oil, tomato, and cucumber pulp
Season with salt and black pepper
Stuff each cucumber piece with the mixture
Garnish with hortelà leaves and serve with leafy greens if desired.
