2 1/2 kg of ripe and perfect pears
1 1/2 kg of sugar
4 cups of water
3 cups of brandy

Carefully peel the pears, making sure they are not mashed
Cut them into four pieces and remove the seeds
Meanwhile, prepare a syrup with the water and sugar
Cook the pears in the syrup, one layer at a time, until they become slightly tender, about 5 minutes of boiling
Remove the pears from the syrup and place them in preserving jars
Cook the syrup for another 15 minutes, until it thickens
Add the brandy and pour this liquid over the pears
Leave 6 mm of free space on the surface
Close immediately
Cook in a water bath for 15 minutes
Allow to mature for 2 years.
