2 1/2 kg of ripe and perfect pears
1 1/2 kg of sugar
4 cups of water
3 cups of brandy

Carefully peel the pears, taking note to avoid crushing them
Cut them into quarters and remove the seeds
While this is being done, prepare a syrup with the water and sugar
Cook the pears in the syrup, one layer at a time, until they are slightly tender (about 5 minutes)
Remove them from the syrup and place them in jars for preserving
Cook the syrup for another 15 minutes, or until it thickens
Add the brandy and pour this liquid over the pears
Leave 6 mm of space free at the surface
Close immediately
