Fur the pork loin with a sharp knife
Mix the remaining ingredients well
Pour over the pork loin and marinate for 3 days, turning 1 or 2 times per day
Bake in a moderate oven allowing 1 hour per kilo
Baste with sweet red wine during cooking if desired
Serves 6 to 10 people.
