1/2 spoon unflavored gelatin
1 tablespoon mustard
1/2 cup mayonnaise

Place the mango chunks in a pan with the wine and bring to a boil
Cook until the mango is well-cooked
Remove some of the hot liquid and place it in a small pan
Sprinkle the gelatin on top
Bring to a gentle simmer and cook, stirring constantly, until the gelatin dissolves
Add the mustard to the mango
Combine everything in a blender and blend until creamy and smooth
Place in a bowl and refrigerate until thickened
Add 1/2 cup of mayonnaise
Refrigerate until serving time, then spoon over the smoked duck slices
Serve with 6 to 8 portions
