3 kg of small cucumbers, cut into 6 mm slices
3 medium-sized onions, sliced
1/2 cup of salt
2 liters of vinegar
3 cups of water
3 tablespoons of mustard in grain
2/3 cup of olive oil

Mix the cucumber with the onion and salt and let it rest for about 3 or 4 hours
Drain and test
If too salty, rinse and drain again
Mix the vinegar, water, and mustard and let it come to a boil
Add the cucumber and onion and let it simmer on the fire
Remove from heat, add the olive oil and mix well
Let it come to a boil again, then immediately pour into preheated jars with 6 mm of space at the surface
Mix gently to remove air bubbles and close tightly
Cook in a bain-marie for 10 minutes
Fill 5 or 6 jars of 500g each
Use as a snack with bread or to accompany meats or salads with mayonnaise.
