For the dough:
1 tablespoon honey
1 yeast tablet (15g)
1 1/4 cups warm water
3 1/2 cups all-purpose flour
2 tablespoons salt
2 tablespoons dried oregano or fresh oregano chopped
3 tablespoons olive oil
Filling:
3 1/2 cups shredded mozzarella cheese (350g)
2 cups broccoli florets, blanched and cooled (300g)

Dissolve the honey and yeast in 1/4 cup warm water and let it rest for about 5 minutes
Combine the flour, salt, and oregano
Add the yeast mixture, remaining water, and olive oil
Place on a floured surface and knead for about 5 minutes until the dough is smooth
Place the dough in a greased bowl and turn to coat the surface
Cover with plastic wrap and let it rise for 1 hour
Preheat oven to 200°C (hot)
Grease a pizza pan 30cm in diameter
Roll out the dough and divide into 2 parts
Use 2/3 of the dough to line the pan, then mix the filling ingredients
Place the filling in the prepared pan, then roll out the remaining dough circle
Place on top of the filling and press edges firmly
Make some cuts in the surface to allow steam to escape
Bake in preheated oven for about 25 minutes or until golden brown on top
Remove from oven, place on wire rack to finish baking bottom crust
Serve with tomato sauce if desired.
