Dough:
2 cups all-purpose flour
1 cup unsalted butter, softened
1 teaspoon salt
3 cups water
Filling:
1/2 cup grated mozzarella cheese
1/2 cup grated cheddar cheese
3 teaspoons salt
1 cup heavy cream fresh
2 eggs
1 teaspoon ground nutmeg
Dough:

Mix the butter with the flour
Add the salt and water, working the dough until it becomes homogeneous
Roll out the dough in a removable-bottom pan
Let it rest in the refrigerator for 20 minutes
Put it in a preheated oven at high temperature for 10 minutes
For the filling, mix the cheeses, heavy cream, eggs, salt, and nutmeg
Remove the dough from the oven and add the filling
Return to the oven for another 20 minutes
Remove when the surface is golden brown and the crust is crispy.
