1/2 cup small mushrooms
4 tablespoons tomato puree
4 tablespoons pickled cucumber in brine
2 tablespoons olive oil
1/2 tablespoon chopped parsley
2 crushed garlic cloves
Salt to taste
To dust
1/2 tablespoon chopped parsley
12 oz snapper fillet

Cut the snapper into 3-centimeter cubes
Sauce
In a bowl, combine all ingredients and mix well
Cover and microwave on high for 6 minutes
Add the snapper cubes and mix well
Cover again and microwave on high for another 4 minutes
Dust with parsley and serve.
