For the cake
5 eggs
1/3 cup all-purpose flour
3/4 cup bread flour
1 tablespoon baking powder
1/3 cup unsweetened cocoa powder
For the filling
1 1/2 cups granulated sugar
1 1/2 cups orange juice
5 large egg yolks
6 tablespoons orange liqueur
2 1/4 cups unsalted butter, softened
4 1/2 tablespoons freshly squeezed orange juice
150g dark chocolate, melted and cooled
For the cake

Preheat the oven to a hot temperature (200°C)
Grease a 28 x 42 cm baking dish well
Beat the eggs with the sugar until light and fluffy
In a separate bowl, whisk together the flours, baking powder, and cocoa powder
Add the egg mixture to the dry ingredients and mix well
Pour the batter into the prepared baking dish and smooth the top
Bake for 15 minutes or until the cake is set
Remove from the oven and let cool in the pan
To make the filling, combine the sugar, orange juice, and egg yolks in a saucepan
Bring to a boil over medium heat, then reduce the heat and simmer for 5 minutes
Stir in the butter and orange liqueur until smooth
Let cool slightly before using
Assemble the cake by spreading the filling over the cooled cake
Roll up the cake tightly and cut off any excess
Place on a serving plate with the filling side down
Cover with additional chocolate, if desired
This cake can be prepared ahead of time
Store in the refrigerator for at least 30 minutes before serving
Serves 20 slices.
