2 eggs

1/4 cup of vegetable oil
1 kg of small sweet potatoes
2 tablespoons of chopped fresh herbs

Blend the eggs with half of the vinegar, the mustard, salt, and white pepper in a blender
Add the olive and vegetable oils in a slow stream, blending until smooth
Add the remaining vinegar and blend until thickened
Set aside
Peel and boil the sweet potatoes until tender
When cool, slice into thin strips lengthwise
Mix with the reserved mayonnaise
Sprinkle chopped fresh herbs and serve at room temperature.
