500g of tomatoes, seedless, cut into 1cm cubes (reserve the seeds with their juice)
1 medium onion, cut into 1cm cubes
1 cup of black olive, pit removed, pitted
1/4 cup of lemon juice
1/3 cup of olive oil
250g of Italian pear (3-4 days old)
1 cup of chopped fresh herbs
Salt and pepper

In a large bowl, combine the tomatoes (strain the seeds through a sieve and use the juice), onion, black olives, lemon juice, olive oil, salt, and pepper
Mix well
Let it sit at room temperature for 1 hour
Cut the pear into 1cm pieces
Just before serving, add the pear to the salad, mix well, and sprinkle with fresh herbs
Serve immediately
