2 cloves of garlic
1 tablespoon salt
3 tablespoons apple cider vinegar
1 tablespoon mustard
1/2 cup olive oil
1/2 teaspoon black peppercorns
300g thinly sliced salami, approximately 2.5cm in length
300g thinly sliced Provolone cheese, approximately 2.5cm in length
2 sprigs of fresh herbs, thinly sliced
1/2 cup arugula, cut into 2.5cm pieces
1 hand-full of grapes
3 tablespoons chopped capers (optional)
6 tablespoons grated Parmesan cheese

6 tablespoons grated Parmesan cheese
Scrub a large bowl with the garlic cloves and remove them
Dissolve the salt in the apple cider vinegar within the bowl, add the mustard and mix very well
Add the olive oil, black peppercorns, and stir well
Combine the salami, Provolone cheese, and all other ingredients
If desired, add more vinegar and olive oil
Serve 6 ways.
