In a small bowl, combine the pineapple, ricotta cheese, and lime juice
Mix well
Season with salt and black pepper

In another small bowl, combine the quark cheese, ketchup, and lime juice
Mix until smooth
Assembly
Spread one spoonful of the tomato filling over a slice of pineapple
Cover with another slice of pineapple and spread one spoonful of the cucumber filling on top
Place one more slice of pineapple on top
Serve.
