Separate the smoked trout into flakes and reserve
Spread four slices of pumpernickel with mayonnaise and top with grated carrot
Place the reserved trout on top, sprinkling with chopped green scallion
Cover with remaining pumpernickel slices
Gently press each sandwich together by hand
Serve in four plates and serve immediately
