5 slices of cured pork belly, diced
6 eggs, beaten
1 tablespoon of chopped parsley
1 tablespoon of chopped green onion
to taste salt
4 leaves of crisp lettuce
4 sweet pears

Fry the bacon in a skillet until crispy
Add the eggs, parsley, green onion, and salt
Stir constantly for a few minutes
Remove from heat while the eggs are still slightly runny
Cut open the pears (if desired, warm them in the oven)
Fill each half with a lettuce leaf and top with eggs
Serve immediately
Makes 8 sandwiches.
