2 large eggplants, cut into 4 parts each
1/4 cup mayonnaise
1 well-chopped garlic clove
2 medium-sized eggplants, sliced into thin strips and grilled
2 medium-sized red bell peppers, grilled
2 medium-sized yellow bell peppers, grilled
2 medium-sized onions, cut into thin rings and grilled
500g of buffalo mozzarella

Grill each eggplant slice in half lengthwise with the core facing down
Spread mayonnaise over each slice
Stuff with eggplant slices, red and yellow bell pepper pieces, onion rings, and buffalo mozzarella sliced into strips
Place in a hot oven preheated to 180°C for 10 minutes
Serve warm
