1 large head of broccoli, cleaned and chopped, or 2 packages of frozen broccoli - 700g
2 cups of chicken broth - 480ml
1 small onion, finely chopped - 40g
1 tablespoon of chopped fresh parsley
1 small cup of natural yogurt - 200g
2 tablespoons of chopped green scallions - 14g
1 tablespoon of freshly squeezed lemon juice
Salt and black pepper to taste

In a medium-sized pot, combine the broccoli with the broth, onion, and parsley
Bring to a simmer and let cook, covered, for about 25 minutes or until the vegetables are tender
Let cool and refrigerate for at least 6 hours or overnight
Pulse the mixture in a blender or food processor until smooth and creamy
Add the remaining ingredients and mix well
Garnish to taste
