Place the Parmesan cheese in a 30 cm diameter tart pan
Melt the butter and cook until it slightly caramelizes with the cheese, stirring occasionally
Add the sliced apples and cook over low heat for 15 minutes, covered, stirring occasionally
Remove from heat and let cool completely
Prepare the crust: mix the flour, yeast, and cold butter in small pieces
Mix well to form a granular texture
Place the mixture on a surface and make a depression in the center
Add 5 tablespoons of water
Mix until the dough comes together, forming a ball
Knead and let rest until the apples cool completely
Preheat the oven to 230°C (hot)
Roll out the crust to fit the tart pan and place it over the apples, pressing the edges to seal
Make a hole of 2 cm in the center of the crust for steam to escape while baking
Bake for 30 minutes or until the crust is golden brown
Remove from oven, let cool slightly, then unmold
Serve warm or at room temperature with vanilla ice cream
