8 eggs

100 g of turkey breast, sliced
50 g of cooked ham, sliced

Reserve two eggs and separate the remaining eggs into three bowls
Beat each bowl separately
In one bowl combine spinach
In another bowl add tomato paste and in the third bowl mix herbs
Season with salt and black pepper each bowl and reserve separately
Sauté potato in a non-stick pan with 1 tablespoon of olive oil, then add peas
Season with salt and black pepper and fry until potato is tender
Add two reserved eggs beaten and let it cook like an omelet on both sides. Reserve
In the same pan, fry each spinach, tomato, and herb omelet separately in the same manner
Place one omelet in a baking dish
Cover with half of turkey breast slices and place the tomato omelet on top
Spread half of mozzarella cheese and repeat layers with remaining omelets and ham
Bake at medium heat for 5 minutes, then serve immediately
